Black pepper chicken

This crispy, takeout style meal will satisfy all of your cravings without breaking the bank.
I love to make this recipe whenever I am craving something spicy and crispy but I do not want to spend money on take-out.

Ingredients
For the chicken:
5 chicken thighs, diced
2 tbsp soy sauce
¼ tsp pepper
1 tsp garlic powder
½ tsp baking soda
¼ cup corn starch
Salt to taste
For the vegetables:
1 red pepper
3 stalks of celery
1 onion
For the black pepper sauce:
1 tsp pepper
½ tsp sichuan peppers
1 tbsp jam
3 tbsp soy sauce
1 tsp chicken powder
Step 1: Prepare the chicken and vegetables
Cut the chicken into cubes and combine with soy sauce, pepper, garlic powder and baking soda. Let sit while preparing the vegetables.
Coat the chicken in corn starch.
Step 2: Cook the chicken and vegetables
Place approximately 1 cm oil into the pan and fry the chicken approximately 3-5 minutes per side, in batches. Set aside when cooked. Add the vegetables to the pain and cook for approximately 3-5 minutes or until starting to soften. Add the chicken back to the pan.
Step 3: Prepare the sauce
Combine the ingredients for the black pepper sauce in a bowl. Add to the pan after returning the chicken. Allow to coat the chicken and vegetables. Serve once the sauce is warm and starting to thicken. Serve over rice.
