Salmon Bowls

A quick (and healthy!) dinner that is also great for meal prep.
This is one of my favorite meal preps to make. I buy salmon that is on sale at the grocery store to help make it more affordable! I make one portion for dinner and then I have a nutritious lunch for the next day.

Ingredients:
For the salmon
2 salmon fillets
Salt and pepper
Butter
For the cucumbers:
4 mini-cucumbers
2 tbsp salt
1 tsp rice vinegar
1 tbsp Gochujang
½ tsp sesame oil
½ tsp sugar
2 tbsp soy sauce
For serving
Rice
Chili oil
Mayo
Lettuce
Step 1: Make the marinated cucumbers
Cut the cucumbers at 45 degrees on the on side and 90 degrees on the other, using chopsticks to make sure that you do not cut all of the way through. Generously salt and let sit for 15 minutes. Rinse off all of the salt. Combine with the rest of the ingredients and set aside (ideally overnight)
Step 2: Fry the salmon
Cut salmon into cubes and fry for a couple minutes on both side, or until cooked through.
Step 3: Assemble
Place cooked rice then lettuce and then salmon and cucumbers. Top salmon with mayo and chili oil.
